Sushi was good. The supposed in house made ramen tasted like the store bought bricks and the vegetables they add were still cold when served. I believe it server was new. I only ever saw him to order and get check. No water or drink refills (server was never around) during our hour plus dinning experience. For a restaurant on a Hilton resort I expected more. I would suggest going to eat at the Hilton restaurant 100 ft away. If your craving Asian style I would make seservations to rain/aqua in town.
I am giving this restaurant 5 stars specifically for the food the food was the best I have ever had and we are quite the sushi and Japanese food enthusiasts. We ordered Chicken tempura & Dumplings (ginger forward, in a great way)for our kids they also gave us a fried seaweed chips prior to ordering which were more delicious than they sound. We ordered the 2 ceviche roll, the chef roll of the day, Salmon nigri and salmon sashimi, Also the Japanese curried shrimp.I will mention that the food is impeccable! The flavor is much more delicious than I had even expected the way The food caressed my palate was beyond blissful. Now at the beginning my review I see that the 5 stars is specifically for the food and I say this because the service Was terrible they were not disrespectful by any means although the a lack of attention to detail for the male server that we had was very frustrating. I continuously informed him that we have a specific allergy to tobiko and masago And they seem to garnish every dish with those items so if you do have an allergy please speak with the owner and make it very clear. But the food more than makes up for the service issues although I am aware that they are working on a new system. So if you want amazing food and you have some time to spare you will not be disappointed!!
Came in on Christmas Eve. All the servers are gone per the government order. But the solo chef is here. LOL. He is cooking and serving and checking out. We ordered an hour ago and still waiting. Lol. Its OK.Ordered 2 Nigiri dish. Wow.. top notch. The chef really put all his effort. You can taste that effort if you will. $22 USD for 10 piece.He is an actual Japanese chef.
The atmosphere was beautiful. The service response, i believe, was just inexperienced staff. We did not have any sense that our order was accepted clearly, and we found it was not, when our food arrived. Im sure it will get better, but for now, be explicit when you order. Food was good.
Very unorganized and bad service. Staff told us they ran out of rice. Then came back and said they actually do have rice but no avocado. We start to order and they then say we can’t do nigiri because we’re busy and it’s going to take too long (restaurant is mostly cleared out and not busy). We proceed to order our rolls and relax... 20 minutes later they come back to say they have no rice again and can’t fulfill our order. Meanwhile other tables are getting fresh sushi served with rice long after they told us they ran out.The constant switch in communication on what they could and could not fulfill for orders was a bad customer experience. On top of that, to take our order and then come back unable to fulfill was the cherry on top.I would expect better service and communication at a curio collection resort (Mahogany bay village).
Im not sure whats going on at this place, we placed our order 15 minutes before an American group of 8 came in; we ordered all our food at one time and our food came out after. I watched two other tables have to go up and speak to them to pay for their meals. Our water glasses were empty and waiting while the other table was refilled before ours.Something isn’t right.I will say the sushi was good, despite the bad service.
Staff is fantastic...The two sushi chefs were outstanding and we had the best sushi we’ve ever had! We will be eating here next time we return to Belize.

Very nice interior space, but has Mahogany Bay Resort inflated prices for poorly executed Japanese standards, served with poor attitude. We stopped in for Sunday lunch after exploring the South end of Ambergris Caye and were the only ones there. Maybe the A team staff and the much ballyhooed chef doesnt show until the evening sitting, but its no excuse for substandard food and service at this price point, at any time. We broke the hostess-waitress iphone meditation and got a meangirl douchetude eyeroll as punishment when ordering. The 50bz$ seafood tempura was mostly unnamed tough fish chunks covered with thin but hard and VERY un-tempuralike crunchy armor coating. The ramen garlic miso broth was actually very tasty, but toppings fell short, consisting mainly of corn(!?) and shredded cabbage. Nice bbq pork belly, but the egg, the other menu noted item for the dish, was missing. Are eggs out of season on Ambergris in April?!? Not a great experience start to finish. Problems likely flow down from bad overall management decisions... Open with the frontline staff or dont open.

The food was good, however, it is a $40 round trip cab ride from town and I spent $100 on lunch, and left there hungry.If you dont have $140+ to drop on lunch, this is not the place for you.
